The Components of Success

1. The Buttery Crust

  • 1 ½ cups Graham cracker crumbs (or crushed Digestive biscuits)
  • 1/3 cup Unsalted butter, melted
  • 2 tbsp Sugar
  • A pinch of salt (this balances the sweetness of the filling)

2. The Velvety Filling

  • 450g (16 oz) Full-fat cream cheese, softened to room temperature
  • 1 cup Powdered sugar (sifted to avoid lumps)
  • 1 ½ cups Cold heavy whipping cream (minimum 35% fat)
  • 1 tsp Vanilla extract
  • 1 tbsp Lemon juice (the acid helps the dairy proteins set)

The Method

Mix the crumbs, sugar, salt, and melted butter until it feels like wet sand. Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan.

The Aeration

  2. Cream the Cheese: In a separate large bowl, beat the softened cream cheese and powdered sugar until completely smooth and fluffy. Add the vanilla and lemon juice.
